Eggs & Oatmeal - My Favorite Breakfast

One of my favorite breakfasts is egg whites with spinach, garlic, jalapeno, salsa and a bowl of oatmeal. I eat this on most mornings and it’s so easy to make. First I start heating up my pan and add a little bit of olive oil. I chop up my garlic and jalapenos (I like spicy food) and toss those into the pan. I immediately add in the spinach and give it about a minute before I pour in my egg whites.

I top my eggs off with salsa but usually only if my mom has made some recently because it’s soooo good! The stuff in the jars just doesn’t compare to home made.

I also add a pinch of salt and pepper for taste. While I’m doing all of that my oatmeal is cooking along side of it in another pot and as it gets done, I add in a dash or two of cinnamon. The entire breakfast probably takes less than 10 minutes to cook.

It fills me up and I’m satisfied until my next meal. I think this is one of the easiest breakfasts to fit into the morning with a little preparation. What’s your favorite eat clean breakfast?

    I eat oatmeal everyday. Made with water, a touch of cinnamon and a pot of 0% fat yogurt stirred in to make it creamy. Definitely fills me up and keeps me going for a few hours.

    Vicki - that sounds great and delicious. Oatmeal is rather plain so adding healthy stuff like cinnamon and yogurt definitely helps!

    mine is a protein pancake. 1/2 c. oatmeal, 2-3 egg whites and 1 scoop of protein powder. Mix in a little water to desired consistency and cook in a pan. I end up with about 25-30 g of protein - a great start for the day!

    My small breakfast is 1 egg on half of a whole wheat english muffin, topped with wilted baby spinach and a bit of avocado.

    Cecismom - I can put avocado on almost anything. I love it and it’s especially good with eggs.

    As much as I love oatmeal, I find that it makes me ravenously hungry as little as 1 hr after breakfast. Even the Irish style old fashioned kind. Sigh…

    Anyone else experience that?

    I like oatmeal too, but I can’t combine it with eggs, because it gives me serious gas problems :).
    My breakfast is usually made of fruit and a protein shake.
